Tacos al Pastor

Ingredients

  • 1.5 lb pork shoulder
  • 3 tbsp achiote paste
  • 1/2 cup pineapple juice
  • 2 tbsp white vinegar
  • 4 garlic cloves
  • 1 tsp ground cumin
  • 2 cups fresh pineapple
  • 12 corn tortillas
  • 1 white onion
  • 1/2 cup chopped cilantro
  • 2 tbsp neutral oil
  • 1 tsp salt

How to cook it

  1. Blend the achiote paste, pineapple juice, vinegar, garlic, cumin, and salt into a smooth marinade.
  2. Slice the pork thinly, coat it in the marinade, and let it sit for 30 minutes.
  3. Heat the oil in a large skillet over high heat and sear the pork in batches until caramelized and cooked through, about 4 minutes per batch.
  4. Add the diced pineapple to the pan and char it lightly with the pork for 2 minutes.
  5. Warm the corn tortillas on a dry griddle until pliable.
  6. Fill the tortillas with pork and pineapple, then finish with diced onion and cilantro.
