Birria-Style Beef Tacos

Ingredients

  • 2.5 lb beef chuck roast
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 2 dried arbol chiles
  • 3 tomatoes
  • 5 garlic cloves
  • 1 white onion
  • 2 bay leaves
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 4 cups beef broth
  • 12 corn tortillas
  • 2 cups shredded Oaxaca cheese
  • 1/2 cup chopped cilantro
  • 2 limes
  • 1.5 tsp salt

How to cook it

  1. Toast the dried chiles in a dry pot until fragrant, then soak them in hot water until softened, about 15 minutes.
  2. Blend the drained chiles with the tomatoes, garlic, half the onion, cumin, and oregano into a smooth sauce.
  3. Season the beef with salt, place it in the pot with the sauce, bay leaves, and broth, and bring to a simmer.
  4. Cover and braise gently until the beef is fork-tender, about 2.5 hours, then shred the meat and skim the rich consomme.
  5. Dip each corn tortilla in the consomme, lay it on a hot griddle, and fill with beef and Oaxaca cheese.
  6. Fold and crisp the tacos until the cheese melts, then serve with cilantro, remaining diced onion, lime, and bowls of consomme for dipping.
