Chicken Flautas
Chicken Flautas is Mexican home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 3 cups cooked shredded chicken
- 12 small flour tortillas
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 cup neutral oil
- 1/2 cup salsa verde
- 1 cup guacamole
- 1/2 cup crumbled cotija
- 1 tsp salt
How to cook it
- Toss the shredded chicken with the cumin, chili powder, garlic powder, and salt.
- Warm the flour tortillas so they roll easily.
- Spoon a line of chicken along each tortilla and roll tightly, securing with a toothpick.
- Heat the oil in a skillet over medium-high until shimmering.
- Fry the flautas in batches, turning, until golden and crisp, about 3 minutes, then drain on paper towels.
- Serve topped with salsa verde, guacamole, and crumbled cotija.

When to cook it
Chicken Flautas takes about 40 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
