Chicken Mole Poblano

Ingredients
- 3 lb bone-in chicken thighs
- 3 dried ancho chiles
- 2 dried guajillo chiles
- 3 tomatoes
- 1 white onion
- 4 garlic cloves
- 2 oz Mexican chocolate
- 1/3 cup sliced almonds
- 3 tbsp sesame seeds
- 1/4 cup raisins
- 1 tsp ground cinnamon
- 1 tsp ground cumin
- 1 corn tortilla
- 3 cups chicken broth
- 4 cups cooked rice
- 3 tbsp olive oil
- 1.5 tsp salt
How to cook it
- Season the chicken with salt and brown it in the olive oil, then set aside.
- Toast the dried chiles briefly, then soak them in hot water until soft.
- Toast the almonds and sesame seeds, reserving a spoonful of sesame for garnish, then fry the tomatoes, onion, and garlic until soft.
- Blend the drained chiles, tomato mixture, toasted nuts, raisins, torn tortilla, cinnamon, cumin, chocolate, and broth into a smooth sauce.
- Return the sauce to the pot, add the chicken, and simmer gently until the mole is thick and the chicken is tender, about 40 minutes.
- Serve the chicken and mole over rice, sprinkled with the reserved sesame seeds.
