Chicken Enchiladas

Ingredients

  • 12 corn tortillas
  • 3 cooked chicken breasts
  • 3 cups gluten-free red enchilada sauce
  • 3 cups shredded cheddar and Monterey Jack
  • 1 onion
  • 3 garlic cloves
  • 2 tsp ground cumin
  • 1/2 cup sour cream
  • 1/4 cup chopped cilantro
  • 2 tbsp neutral oil

How to cook it

  1. Heat the oven to 375F.
  2. Cook the onion and garlic in the oil with the cumin until soft, about 5 minutes, then toss with the shredded chicken and 1 cup of the enchilada sauce.
  3. Spread 1/2 cup sauce in a baking dish.
  4. Fill each tortilla with the chicken mixture and a little cheese, roll up, and place seam-side down in the dish.
  5. Pour the remaining sauce over the top and cover with the rest of the cheese.
  6. Bake until bubbling and the cheese melts, about 25 minutes, then top with sour cream and cilantro.
