Beef Picadillo

Ingredients

  • 1.5 lb ground beef
  • 2 russet potatoes
  • 15 oz diced tomatoes
  • 1 onion
  • 3 garlic cloves
  • 2 carrots
  • 1 cup frozen peas
  • 1 tsp ground cumin
  • 1/4 tsp ground cinnamon
  • 1 bay leaf
  • 4 cups cooked rice
  • 2 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Heat the olive oil in a skillet and soften the onion, garlic, carrots, and diced potato, about 6 minutes.
  2. Add the ground beef and brown it, breaking it up as it cooks.
  3. Stir in the tomatoes, cumin, cinnamon, bay leaf, and salt.
  4. Cover and simmer until the potatoes are tender, about 15 minutes, adding a splash of water if it looks dry.
  5. Stir in the peas and cook 3 minutes more.
  6. Serve the picadillo spooned over warm rice.
