Stuffed Shells

Ingredients
- 20 jumbo pasta shells
- 15 oz ricotta
- 2 cups shredded mozzarella
- 3/4 cup grated parmesan
- 1 large egg
- 3 cups baby spinach
- 28 oz crushed tomatoes
- 3 garlic cloves
- 1/2 onion
- 2 tbsp olive oil
- 1/4 cup chopped basil
- 3/4 tsp salt
How to cook it
- Heat the oven to 375F and cook the pasta shells until just pliable, then drain and cool.
- Warm the olive oil and cook the onion and garlic until soft, add the crushed tomatoes and half the basil, season with salt, and simmer 15 minutes.
- Wilt the spinach in a dry pan, then chop it and squeeze out the moisture.
- Mix the ricotta, egg, half the parmesan, the spinach, and the remaining basil.
- Spread a layer of sauce in a baking dish and fill each shell with the ricotta mixture, arranging them on top.
- Spoon the remaining sauce over, then scatter with mozzarella and the rest of the parmesan.
- Cover with foil and bake 20 minutes, then uncover and bake until bubbling, about 15 minutes more.
