- 2.5 cups all-purpose flour
- 3/4 cup milk
- 1/3 cup water
- 1 tsp salt

- 2 tbsp butter
- 2 tbsp fresh parsley, chopped
How to cook it
- Whisk the flour, salt, and nutmeg together in a bowl.
- Beat in the milk and water a little at a time until the batter is thick, smooth, and drops slowly off the spoon in a ribbon.
- Let the batter rest for 10 minutes while a wide pot of salted water comes to a gentle boil.
- Press the batter through a Spaetzle press or scrape it in thin strips off a damp board into the simmering water.
- Cook in batches for 2 to 3 minutes, until the noodles float, then lift them out with a slotted spoon.
- Toss the drained noodles with the butter and parsley and serve straight away beside a roast, a Schnitzel, or a saucy stew.
