- 2 tbsp vegetable oil

- 1 cup shredded cheese (Emmental or Gouda)
- 1 onion, finely chopped
- 1/3 cup dry breadcrumbs
- 2 tbsp fresh parsley, chopped
- 1/4 tsp ground nutmeg
- 2 tbsp butter
- 4 cups vegetable broth
- 1/4 tsp black pepper
How to cook it
- Knead the flour, water, oil, and salt into a smooth, firm dough, then cover and let it rest for 30 minutes.
- Meanwhile, cook the onion in 1 tbsp of the butter until soft, then combine it in a bowl with the spinach, quark, shredded cheese, breadcrumbs, parsley, nutmeg, and pepper.
- Roll the dough out thin on a floured surface and cut it into wide strips; spoon the filling in a line down the center of each strip, fold the dough over to enclose it, and press the edges to seal, then cut into large square pockets.
- Bring the vegetable broth to a gentle simmer in a wide pot and poach the pockets in batches for 8 to 10 minutes, until the dough is tender and the filling is heated through.
- Lift the pockets out, melt the remaining butter in a skillet, and pan-fry them for 2 to 3 minutes per side, until lightly golden, then serve hot.
