Roasted Cauliflower Tacos

Ingredients
- 1 large head cauliflower
- 12 corn tortillas
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 3 limes
- 2 cups shredded red cabbage
- 2 avocados
- 1/2 cup chopped cilantro
- 1/2 red onion
- 3 tbsp olive oil
- 1 tsp salt
How to cook it
- Heat the oven to 425F and cut the cauliflower into small florets.
- Toss the florets with the olive oil, chili powder, cumin, smoked paprika, and salt.
- Roast until deeply browned and tender, about 25 minutes, turning once.
- Mash the avocados with the juice of one lime and half the cilantro.
- Toss the red cabbage with the juice of another lime for a quick slaw.
- Warm the corn tortillas and build tacos with avocado, cauliflower, slaw, red onion, and remaining cilantro.
