Rigatoni with Sausage Ragu

Ingredients
- 1 lb rigatoni
- 1 lb Italian sausage
- 28 oz crushed tomatoes
- 2 tbsp tomato paste
- 1 onion
- 4 garlic cloves
- 1 tsp fennel seeds
- 1/2 tsp red pepper flakes
- 2 tbsp olive oil
- 1/2 cup grated parmesan
- 1/4 cup chopped basil
- 1/2 tsp salt
How to cook it
- Bring a large pot of salted water to a boil for the pasta.
- Warm the olive oil in a skillet and cook the sausage with the onion, breaking it up, until browned, about 8 minutes.
- Stir in the garlic, fennel seeds, and red pepper flakes and cook 1 minute.
- Add the tomato paste, then the crushed tomatoes, and simmer until thickened, about 20 minutes.
- Cook the rigatoni until al dente, reserving a cup of pasta water before draining.
- Toss the pasta with the ragu, loosening with pasta water as needed.
- Finish with parmesan and basil and serve.
