  • 1.5 lb button or cremini mushrooms, sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 3 tbsp fresh parsley, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Heat the butter and olive oil in a large skillet over high heat until foaming.
  2. Add the mushrooms in a single layer and cook without stirring for 3 to 4 minutes, until deeply browned on the bottom.
  3. Stir and cook for 3 to 4 minutes more, until the mushrooms release their liquid and it evaporates.
  4. Add the shallot and garlic and cook for 2 minutes, until fragrant and the mushrooms are tender.
  5. Season with the salt and pepper and stir in the parsley just before serving warm as the classic autumn vegetable side.
