Ingredients
- 8 slices sliced white sandwich bread
- 8 oz button mushrooms, sliced
- 1 large tomato, thinly sliced
- 3 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1.5 cups Gruyere cheese, grated
- 1 tbsp Dijon mustard
- 1/2 tsp salt
- 1/4 tsp black pepper
How to cook it
- Melt 1 tablespoon of the butter in a skillet and cook the mushrooms over medium-high heat until they release their liquid and it evaporates, about 6 minutes, then season lightly and set aside.
- Make a quick bechamel: melt the remaining butter in a small saucepan, whisk in the flour, and cook for 1 minute, then gradually whisk in the milk and cook, stirring, until thickened, about 4 minutes; season with the salt and pepper.
- Spread a thin layer of Dijon mustard on four of the bread slices, top with the mushrooms and tomato slices, spread about half of the bechamel over them, scatter on half of the Gruyere, and top with the remaining bread slices.
- Spread the rest of the bechamel over the tops of the sandwiches and scatter the remaining Gruyere on top.
- Place the sandwiches on a baking sheet and broil for 3 to 4 minutes, until the cheese is bubbling and golden.
- Let the sandwiches cool for a minute before cutting in half; built with mushrooms and tomato in place of the ham, this is the everyday meatless croque of a French cafe counter.
