Gratin de Courgettes (Zucchini Gratin)

- 2 lbs zucchini, sliced
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1/2 cup creme fraiche
- 3/4 cup gruyere cheese, grated
- 1/4 tsp ground nutmeg
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Preheat the oven to 400 F (200 C).
- Heat the olive oil in a wide skillet and cook the sliced zucchini, onion, and garlic over medium-high heat for 10 minutes, until the zucchini softens and most of its liquid cooks off.
- Stir in the creme fraiche and the nutmeg, season with the salt and pepper, and spread the mixture in a buttered baking dish.
- Scatter the gruyere over the top.
- Bake for 20 minutes, until the top is golden and bubbling, then let it rest for 5 minutes; it makes a light accompaniment to roast or grilled meat and fish alike.
