Chicken Stroganoff

Ingredients
- 1.5 lb boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp butter
- 1 onion
- 3 garlic cloves
- 12 oz cremini mushrooms
- 2 tbsp all-purpose flour
- 2 cups chicken broth
- 1 tbsp Worcestershire sauce
- 1 tbsp Dijon mustard
- 3/4 cup sour cream
- 12 oz egg noodles
- 2 tbsp chopped parsley
- 1 tsp salt
- 1/2 tsp black pepper
How to cook it
- Cut the chicken into thin strips and season with the salt and pepper.
- Heat the olive oil in a large skillet over medium-high and brown the chicken, then set it aside.
- Melt the butter in the same pan and cook the onion, garlic, and mushrooms until browned, about 8 minutes.
- Sprinkle in the flour for 1 minute, then whisk in the broth, Worcestershire, and Dijon and simmer until thickened, about 5 minutes.
- Meanwhile boil the egg noodles until tender, about 8 minutes, then drain.
- Return the chicken to the pan, lower the heat, stir in the sour cream, and serve over the noodles with parsley.
