  • 1 lb green beans, trimmed
  • 2 garlic cloves
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Bring a large pot of salted water to a boil and cook the green beans for 5 to 6 minutes, until tender but still bright green.
  2. Drain the beans and, if not serving right away, plunge them into a bowl of cold water to keep their color, then drain again.
  3. Heat the olive oil in a wide skillet and cook the minced garlic for 30 seconds, just until fragrant, taking care not to let it brown.
  4. Add the beans to the skillet and toss for 2 minutes so they warm through and pick up the garlic.
  5. Off the heat, stir in the chopped parsley and the lemon juice, season with the salt and pepper, and serve right away.
