Moong Dal (Yellow Lentil)
Moong Dal (Yellow Lentil) is North Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre, the protein alongside, and the soup. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 cups yellow moong dal
- 4.5 cups water
- 3/4 tsp turmeric
- 1 tomato
- 4 garlic cloves
- 1 tbsp grated ginger
- 2 green chilies
- 1 tsp cumin seeds
- 1/2 tsp red chili powder
- 3 tbsp neutral oil
- 1/4 cup chopped cilantro
- 1/2 lemon
- 1 tsp salt
How to cook it
- Rinse the moong dal and pressure cook it with the turmeric, tomato, salt, and water until soft and pourable.
- Whisk the dal smooth and keep it warm, thinning with a little hot water so it stays light and brothy.
- Heat the oil in a small pan and let the cumin seeds sizzle, then add the garlic, ginger, and green chilies and cook until golden.
- Stir in the red chili powder off the heat, then pour the tempering into the dal.
- Simmer for 3 minutes, finish with cilantro and a squeeze of lemon, and serve.

When to cook it
Moong Dal (Yellow Lentil) takes about 35 minutes from a cold stove to the table, and the cooking itself is easy going. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
