North Indian
Moong Dal Chilla (Lentil Crepes)
Moong Dal Chilla (Lentil Crepes) is North Indian home cooking, eaten at breakfast. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 cups yellow moong dal
- 2 green chilies
- 1 tbsp grated ginger
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 onion
- 1/4 cup chopped cilantro
- 1/2 cup water
- 3 tbsp neutral oil
- 3/4 tsp salt
How to cook it
- Soak the moong dal for 3 hours, then drain and blend it with the ginger, green chilies, cumin, and a little water into a smooth batter.
- Stir in the turmeric, salt, finely chopped onion, and cilantro.
- Heat a nonstick pan over medium, brush with oil, and pour a ladle of batter, spreading it into a thin round.
- Drizzle a little oil around the edges and cook until the underside is golden, about 3 minutes, then flip and cook until set.
- Serve the chillas hot off the pan.

When to cook it
Moong Dal Chilla (Lentil Crepes) takes about 30 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at breakfast. Nothing in the calendar rules it out, so it is a year round dish.
