Ingredients
- 1.5 cups red lentils, rinsed
- 2 tbsp olive oil
- 1 onion, finely chopped

- 2 garlic cloves, minced

- 1 tsp sweet paprika
- 1 tbsp tomato paste
- 5 cups vegetable broth
- 1 tsp salt
- 1/4 tsp black pepper
- 1 lemon, cut into wedges
- 2 tbsp fresh mint or parsley, chopped
How to cook it
- Heat the olive oil in a large pot over medium heat and cook the onion and carrot until softened, about 6 minutes.
- Add the garlic, cumin, and paprika and cook for 1 minute, until fragrant.
- Stir in the tomato paste, red lentils, and vegetable broth, bring to a boil, then reduce the heat and simmer for 20 to 25 minutes, until the lentils are completely soft.
- Puree the soup with an immersion blender, or in batches in a stand blender, until smooth, then season with the salt and pepper.
- Ladle into bowls and serve hot with lemon wedges on the side for squeezing over the top and a scatter of mint or parsley, the everyday version served in Turkish-German homes, brighter and more cumin-forward than the vinegar-based German Linsensuppe.
