Ingredients
- 1.5 cups brown or green lentils, dried
- 1 leek, sliced
- 2 carrots, diced
- 1 cup celery root, diced
- 2 garlic cloves, minced
- 1 cup canned diced tomatoes
- 5 cups vegetable broth
- 1 bay leaf
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Heat the olive oil in a large pot and cook the leek, carrots, and celery root over medium heat until softened, about 6 minutes.
- Add the garlic and cook for 1 minute, then stir in the rinsed lentils, diced tomatoes, bay leaf, and vegetable broth.
- Bring to a boil, then lower the heat and simmer uncovered for 30 minutes, until the lentils are tender.
- Remove the bay leaf and stir in the red wine vinegar, then season with the salt and pepper.
- Ladle into bowls and scatter the parsley over the top; a plain vegetable and lentil pot that plenty of German kitchens make with no Speck at all.
