  • 1 onion, sliced
  • 2 carrots, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 2 cups broccoli florets
  • 8 oz button mushrooms, sliced
  • 2 garlic cloves, minced
  • 1/4 cup vegetable broth
  • 1 tsp dried herbs (Italian mix or thyme)
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

How to cook it

  1. Heat the oil in a large skillet or wok over high heat, add the onion and carrots, and stir-fry for 3 minutes.
  2. Add the bell peppers, zucchini, and broccoli and stir-fry for 4 to 5 minutes, keeping the vegetables moving so they cook fast and stay a little crisp.
  3. Add the mushrooms and garlic and cook for 3 minutes more, until the mushrooms soften.
  4. Pour in the vegetable broth, add the dried herbs, salt, and pepper, and cook for 2 minutes, until the vegetables are just tender and the pan is glossy.
