Ingredients
- 1 lb potatoes, peeled and diced
- 2 carrots, diced
- 2 leeks, sliced
- 1 cup kohlrabi, diced
- 1 cup green beans, trimmed and cut
- 1/2 cup frozen peas
- 1.5 cups canned white beans, drained and rinsed
- 6 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp dried marjoram
- 1 bay leaf
- 2 tbsp fresh parsley, chopped
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Heat the olive oil in a large pot and cook the carrots, leeks, and kohlrabi over medium heat for 6 minutes, until starting to soften.
- Add the potatoes, green beans, marjoram, bay leaf, and vegetable broth, bring to a boil, then lower the heat and simmer uncovered for 20 minutes.
- Stir in the white beans and peas and simmer for 8 minutes more, until every vegetable is tender.
- Remove the bay leaf and season with the salt and pepper.
- Ladle into deep bowls and scatter the parsley over the top; whatever vegetables are left in the drawer can go into this pot, which is exactly the point of the dish.
