Jaegerschnitzel (Pork Cutlets in Mushroom Sauce)
Jaegerschnitzel (Pork Cutlets in Mushroom Sauce) is German home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 4 pork cutlets, thin
- 3 tbsp all-purpose flour
- 2 tbsp vegetable oil
- 2 tbsp butter
- 1 onion, finely chopped
- 10 oz button mushrooms, sliced
- 1 cup beef broth
- 1/2 cup heavy cream
- 1/2 tsp sweet paprika
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Season the pork cutlets with the salt and pepper, then dust them lightly with the flour, shaking off the excess.
- Heat the oil in a large skillet over medium-high heat and fry the cutlets for 2 to 3 minutes per side, until browned and cooked through, then set them aside and keep warm.
- Melt the butter in the same skillet and cook the onion until softened, about 3 minutes, then add the mushrooms and cook for 5 to 6 minutes, until golden.
- Stir in the paprika, pour in the beef broth, and simmer for 5 minutes, then stir in the cream and simmer for 2 to 3 minutes more, until slightly thickened.
- Return the cutlets to the pan to warm through in the sauce, then serve hot, spooning the mushroom sauce generously over the top.

When to cook it
Jaegerschnitzel (Pork Cutlets in Mushroom Sauce) takes about 40 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
