Ingredients
- 1 lb prawns
- 1 cup grated coconut
- 1.5 tbsp coriander seeds
- 1 tsp cumin seeds
- 4 dried red chilies
- 1/2 tsp turmeric
- 1 tbsp tamarind pulp
- 1 onion
- 1 tomato
- 4 garlic cloves
- 3 tbsp neutral oil
- 1.5 cups water
- 1 tsp salt
How to cook it
- Clean and devein the prawns, rinse well, and set aside.
- Dry roast the coriander seeds, cumin seeds, and dried red chilies until fragrant.
- Grind with the coconut, garlic, and turmeric into a smooth paste using a little water.
- Heat the oil in a pan, saute the chopped onion until soft, then add the chopped tomato and cook until pulpy.
- Add the ground coconut masala and cook 5 minutes, stirring often.
- Add the water, tamarind pulp, and salt, and bring to a simmer.
- Add the prawns and cook just until they turn pink and curl, about 4 to 5 minutes, taking care not to overcook them.
- Serve hot over steamed rice.
