Ingredients
- 8 dried kokum petals
- 1 cup grated coconut
- 2.5 cups water
- 2 garlic cloves
- 1 green chili
- 1/4 tsp cumin seeds
- 2 tbsp chopped cilantro
- 1/2 tsp salt
How to cook it
- Soak the kokum petals in half a cup of warm water for 15 minutes to release their color and tang.
- Grind the grated coconut with a cup of water, then strain through a fine sieve or cloth, pressing to extract the thick coconut milk, and repeat once more with the remaining water for a thinner second extract.
- Blend the soaked kokum with the garlic, green chili, and cumin seeds, then strain and stir into the coconut milk.
- Season with salt and adjust with a little water for a pourable consistency.
- Chill and garnish with cilantro before serving.
- Serve cold in small glasses alongside fish curry and rice, sipped on its own or poured over the rice.
