Dalitoy (Plain Tempered Toor Dal)

Dalitoy (Plain Tempered Toor Dal) is West Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre, the protein alongside, and the soup. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

Ingredients

  • 1 cup toor dal
  • 4 cups water
  • 1/2 tsp turmeric
  • 2 tbsp oil
  • 1 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 4 garlic cloves
  • 2 dried red chilies
  • 8 curry leaves
  • 1/2 chopped onion
  • 1 tsp tamarind pulp
  • 2 tbsp chopped cilantro
  • 1 tsp salt

How to cook it

  1. Rinse the toor dal and pressure cook it with the water and turmeric until soft, about 4 whistles, then mash it lightly smooth.
  2. Heat the oil in a pan and add the mustard seeds and cumin seeds, letting them pop.
  3. Add the crushed garlic and dried red chilies, and fry until the garlic turns golden and fragrant.
  4. Stir in the onion and cook until softened, about 3 minutes.
  5. Add the curry leaves, then pour the tempering into the cooked dal along with the tamarind pulp and salt.
  6. Simmer for 5 minutes to bring the flavors together, finish with cilantro, and serve hot with rice and fish curry.
