Cabbage Foogath (Coconut Cabbage Stir-Fry)
Cabbage Foogath (Coconut Cabbage Stir-Fry) is West Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre and the cooked vegetable. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 4 cups shredded cabbage
- 1/2 cup grated coconut
- 1/2 tsp mustard seeds
- 2 dried red chilies
- 1/4 tsp turmeric
- 1 onion
- 2 tbsp neutral oil
- 3/4 tsp salt
How to cook it
- Heat the oil in a wide pan, add the mustard seeds and let them crackle, then add the dried red chilies.
- Add the chopped onion and saute until soft.
- Add the shredded cabbage, turmeric, and salt, and toss well.
- Cover and cook on medium-low heat, stirring occasionally, until the cabbage is just tender but still has a little bite, about 8 minutes.
- Stir in the grated coconut and cook uncovered for 2 more minutes to warm it through.
- Serve warm alongside rice and fish curry.
