Dudhi Nu Shaak (Sweet Bottle Gourd Curry)
Dudhi Nu Shaak (Sweet Bottle Gourd Curry) is West Indian home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre and the cooked vegetable. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1 bottle gourd
- 2 tbsp split chana dal
- 2 tbsp oil
- 1 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric
- 1 green chilies
- 1 tsp sugar
- 2 tbsp chopped cilantro
- 3/4 tsp salt
- 1/2 cup water
How to cook it
- Heat the oil in a pan and add the mustard seeds and cumin seeds, letting them sizzle.
- Add the green chili and the cubed bottle gourd, along with the chana dal, and stir to coat with the turmeric and salt.
- Add the water, cover, and cook over medium-low heat until the bottle gourd turns soft and translucent, about 15 minutes.
- Stir in the sugar and cook uncovered for a couple of minutes so any extra water evaporates.
- Finish with cilantro and serve warm with rotli, this is one of the lightest shaaks in a Gujarati weeknight thali.
Serve it with
A West Indian dinner is a plate rather than a single dish. These are the courses that normally sit beside Dudhi Nu Shaak (Sweet Bottle Gourd Curry), read from the same composition Dinejot builds a real meal from.
