Masale Bhaat (Spiced Mixed-Vegetable Rice)

Ingredients
- 1.5 cups basmati rice
- 2 cups mixed vegetables
- 2 tsp goda masala
- 2 tbsp grated coconut
- 4 cloves
- 1 cinnamon stick
- 1 bay leaf
- 1/2 tsp mustard seeds
- 1/2 tsp cumin seeds
- 1/2 tsp turmeric
- 3 tbsp neutral oil
- 3 cups water
- 1.25 tsp salt
- 2 tbsp chopped cilantro
How to cook it
- Rinse the rice and set it aside to drain.
- Heat the oil in a pot, add the mustard seeds, cumin seeds, cloves, cinnamon, and bay leaf, and let them sizzle.
- Add the chopped mixed vegetables and saute for 3 to 4 minutes.
- Stir in the goda masala, turmeric, and grated coconut, and cook a minute until fragrant.
- Add the drained rice and toss gently to coat it in the spices.
- Pour in the water and salt, bring to a boil, then cover and simmer on low heat until the rice is fully cooked and the water is absorbed, about 15 minutes.
- Let it rest covered for 5 minutes, fluff with a fork, garnish with cilantro, and serve hot as a one-pot meal.
