Goan Fish Fry (Rava-Crusted Fried Fish)
Goan Fish Fry (Rava-Crusted Fried Fish) is West Indian home cooking, eaten at lunch and dinner. On the plate it is the protein alongside. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1 lb fish fillets
- 3/4 cup semolina
- 1/2 tsp turmeric
- 1 tsp red chili powder
- 1 tsp grated ginger
- 2 garlic cloves
- 1 tbsp lemon juice
- 4 tbsp neutral oil
- 1 tsp salt
How to cook it
- Clean the fish fillets and pat dry, then rub with turmeric, chili powder, ginger, garlic, lemon juice, and salt, and marinate for 20 minutes.
- Spread the semolina on a plate and press each marinated fillet into it, coating both sides well.
- Heat the oil in a wide pan over medium heat.
- Shallow fry the fillets in batches until golden and crisp on both sides, about 3 to 4 minutes per side.
- Drain on paper towels and serve hot with lemon wedges alongside fish curry and rice.

When to cook it
Goan Fish Fry (Rava-Crusted Fried Fish) takes about 30 minutes from a cold stove to the table, and the cooking itself is a fair bit of work. It is eaten at lunch and dinner. Nothing in the calendar rules it out, so it is a year round dish.
