Eggplant Parmesan
Eggplant Parmesan is Italian home cooking, eaten at dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 2 large eggplants
- 1 cup all-purpose flour
- 3 large eggs
- 2 cups breadcrumbs
- 1 cup grated parmesan
- 3 cups marinara sauce
- 16 oz fresh mozzarella
- 1 cup fresh basil
- 1/2 cup olive oil
- 1 tsp salt
How to cook it
- Salt the eggplant slices and let them drain 15 minutes, then pat dry.
- Set up a breading station: flour, beaten eggs, and breadcrumbs mixed with half the parmesan.
- Dredge each slice in flour, then egg, then the breadcrumbs.
- Fry in the olive oil over medium heat until golden, about 2 minutes per side, then drain.
- Heat the oven to 400F. Layer marinara, eggplant, mozzarella, and parmesan in a baking dish, repeating to fill it.
- Bake until bubbling and the cheese is browned, about 25 minutes, then top with basil.

When to cook it
Eggplant Parmesan takes about 75 minutes from a cold stove to the table, and the cooking itself is a proper project. It is eaten at dinner. Nothing in the calendar rules it out, so it is a year round dish.
