Ingredients

  • 1 lb penne
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 3/4 cup heavy cream
  • 2 tbsp butter
  • 1 onion
  • 3 garlic cloves
  • 1/2 cup grated parmesan
  • 1 tbsp olive oil
  • 1/4 cup chopped basil
  • 1/4 tsp red pepper flakes
  • 1/2 tsp salt

How to cook it

  1. Bring a large pot of salted water to a boil for the penne.
  2. Melt the butter with the olive oil in a skillet and cook the onion until soft, about 5 minutes, then add the garlic and red pepper flakes for 1 minute.
  3. Stir in the tomato paste, then the crushed tomatoes, and simmer 12 minutes.
  4. Pour in the cream and warm gently until the sauce turns rosy.
  5. Cook the penne until al dente and reserve a cup of pasta water before draining.
  6. Toss the pasta with the sauce and parmesan, loosening with pasta water as needed.
  7. Finish with basil and serve.
