Ingredients
- 1 lb penne
- 28 oz crushed tomatoes
- 2 tbsp tomato paste
- 3/4 cup heavy cream
- 2 tbsp butter
- 1 onion
- 3 garlic cloves
- 1/2 cup grated parmesan
- 1 tbsp olive oil
- 1/4 cup chopped basil
- 1/4 tsp red pepper flakes
- 1/2 tsp salt
How to cook it
- Bring a large pot of salted water to a boil for the penne.
- Melt the butter with the olive oil in a skillet and cook the onion until soft, about 5 minutes, then add the garlic and red pepper flakes for 1 minute.
- Stir in the tomato paste, then the crushed tomatoes, and simmer 12 minutes.
- Pour in the cream and warm gently until the sauce turns rosy.
- Cook the penne until al dente and reserve a cup of pasta water before draining.
- Toss the pasta with the sauce and parmesan, loosening with pasta water as needed.
- Finish with basil and serve.
