Chicken Tortilla Soup

Ingredients
- 1 lb chicken breasts
- 8 cups chicken broth
- 28 oz fire-roasted tomatoes
- 1 onion
- 4 garlic cloves
- 1 jalapeno
- 2 tsp ground cumin
- 1 tbsp chili powder
- 15 oz canned black beans
- 1 cup corn kernels
- 4 corn tortillas
- 2 limes
- 1/2 cup chopped cilantro
- 1 avocado
- 2 tbsp olive oil
- 1 tsp salt
How to cook it
- Heat the olive oil in a pot and soften the onion, garlic, and jalapeno, about 5 minutes.
- Stir in the cumin and chili powder, then add the tomatoes, broth, and chicken breasts.
- Simmer until the chicken is cooked, about 15 minutes, then remove it, shred it, and return it to the pot.
- Add the black beans and corn and simmer 5 minutes more, seasoning with salt.
- Slice the tortillas into thin strips and crisp them in a dry skillet or bake until golden.
- Ladle the soup into bowls and top with tortilla strips, avocado, cilantro, and a squeeze of lime.
