Chicken Tortilla Soup

Ingredients

  • 1 lb chicken breasts
  • 8 cups chicken broth
  • 28 oz fire-roasted tomatoes
  • 1 onion
  • 4 garlic cloves
  • 1 jalapeno
  • 2 tsp ground cumin
  • 1 tbsp chili powder
  • 15 oz canned black beans
  • 1 cup corn kernels
  • 4 corn tortillas
  • 2 limes
  • 1/2 cup chopped cilantro
  • 1 avocado
  • 2 tbsp olive oil
  • 1 tsp salt

How to cook it

  1. Heat the olive oil in a pot and soften the onion, garlic, and jalapeno, about 5 minutes.
  2. Stir in the cumin and chili powder, then add the tomatoes, broth, and chicken breasts.
  3. Simmer until the chicken is cooked, about 15 minutes, then remove it, shred it, and return it to the pot.
  4. Add the black beans and corn and simmer 5 minutes more, seasoning with salt.
  5. Slice the tortillas into thin strips and crisp them in a dry skillet or bake until golden.
  6. Ladle the soup into bowls and top with tortilla strips, avocado, cilantro, and a squeeze of lime.
