Chicken Saltimbocca

Ingredients

  • 4 chicken cutlets
  • 8 prosciutto slices
  • 12 fresh sage leaves
  • 1/3 cup all-purpose flour
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 1 cup chicken broth
  • 2 tbsp lemon juice
  • 1/4 tsp salt

How to cook it

  1. Pound the chicken cutlets thin and season them lightly with salt.
  2. Lay two sage leaves on each cutlet, drape with prosciutto and press so it adheres, then dust the underside with flour.
  3. Heat the olive oil and 1 tbsp butter in a skillet over medium-high and cook the cutlets prosciutto-side down until crisp, about 3 minutes, then flip and cook 2 minutes more, and set aside.
  4. Pour the chicken broth and lemon juice into the pan and simmer, scraping up the browned bits, until reduced by half.
  5. Swirl in the remaining butter to make a glossy sauce.
  6. Return the cutlets to warm through and spoon the sauce over to serve.
