Chicken Tinga Tacos

Ingredients
- 1.5 lb boneless skinless chicken thighs
- 3 Roma tomatoes
- 2 chipotle peppers in adobo
- 1 white onion
- 3 garlic cloves
- 1 tsp dried oregano
- 1 tsp ground cumin
- 1 bay leaf
- 1 cup chicken broth
- 12 corn tortillas
- 2 tbsp neutral oil
- 1/2 cup queso fresco
- 1/4 cup fresh cilantro
- 1 lime
How to cook it
- Simmer the chicken thighs in salted water with the bay leaf for 20 minutes, then shred and reserve 1 cup of the cooking liquid.
- Char the tomatoes, half the onion, and the garlic in a dry skillet over medium-high heat until blistered, about 6 minutes.
- Blend the charred vegetables with the chipotles, oregano, cumin, and 1/2 cup broth until smooth.
- Heat the oil in a skillet over medium, pour in the sauce, and cook until darkened and thick, 5 minutes.
- Add the shredded chicken and reserved liquid and simmer until saucy and coating the meat, 8 to 10 minutes; season with salt.
- Warm the corn tortillas on a dry griddle until pliable, about 30 seconds per side.
- Fill the tortillas with tinga and top with crumbled queso fresco, diced onion, cilantro, and a squeeze of lime.
