Ingredients

  • 1 lb boiled pork sausage (Fleischwurst or Lyoner), sliced into strips
  • 1 red onion, thinly sliced
  • 3 dill pickles, sliced
  • 3 tbsp white wine vinegar
  • 3 tbsp vegetable oil
  • 1 tsp Dijon mustard
  • 2 tbsp fresh chives, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Combine the sliced sausage, red onion, and pickles in a large bowl.
  2. Whisk together the vinegar, oil, mustard, salt, and pepper in a small bowl to make the dressing.
  3. Pour the dressing over the sausage mixture and toss well to coat.
  4. Let the salad sit for at least 10 minutes at room temperature so the flavors meld.
  5. Scatter the chives over the top just before serving with dark bread on the side.
