Vegetable Daliya (Broken Wheat Porridge)
Vegetable Daliya (Broken Wheat Porridge) is North Indian home cooking, eaten at breakfast. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.5 cups broken wheat (daliya)
- 1 onion
- 1 carrot
- 1/2 cup green peas
- 1 tomato
- 1 green chilies
- 1 tbsp grated ginger
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 2 tbsp neutral oil
- 4 cups water
- 1/4 cup chopped cilantro
- 1 tsp salt
How to cook it
- Dry roast the broken wheat in a pressure pan over medium heat until lightly golden and fragrant, about 4 minutes, then set it aside.
- Heat the oil in the same pan and let the cumin seeds sizzle, then add the onion, ginger, and green chili and cook until soft.
- Stir in the carrot, peas, tomato, turmeric, and salt and cook for 3 minutes.
- Add the roasted daliya and water, close the lid, and cook for 3 whistles, then let the pressure release naturally.
- Fluff gently, stir through the cilantro, and serve warm.
