Ingredients

  • 1/2 cup seedless tamarind
  • 12 pitted dates
  • 1/4 cup jaggery
  • 1 tsp roasted cumin powder
  • 1/2 tsp dry ginger powder
  • 1/2 tsp black salt
  • 1/4 tsp salt
  • 2 cups water

How to cook it

  1. Simmer the tamarind and dates in the water until the dates are very soft, about 10 minutes.
  2. Cool a little, then blend smooth and strain out any fibers and skins.
  3. Return the puree to the pan with the jaggery, roasted cumin, dry ginger, black salt, and salt, and simmer until it thickens to a pourable sauce.
  4. Cool fully, then serve a spoonful in a small bowl alongside the meal; it keeps in the fridge for a week.
