Ingredients

  • 1 cup couscous (fine semolina)
  • 1 cup boiling water or vegetable broth
  • 3 tomatoes, diced
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 3 tbsp fresh mint, chopped
  • 1/2 cup fresh parsley, chopped
  • 3 tbsp lemon juice
  • 4 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Put the couscous in a bowl, pour the boiling water or broth over it, cover, and let it stand for 5 minutes, then fluff with a fork and let it cool to room temperature.
  2. Stir the diced tomatoes, cucumber, and red onion into the cooled couscous.
  3. Add the chopped mint and parsley.
  4. Whisk together the lemon juice, olive oil, salt, and pepper, then pour it over the salad and toss well.
  5. Chill for at least 15 minutes before serving, or serve at room temperature right away.
