Couscous au Poulet et Legumes (Chicken and Vegetable Couscous)

Ingredients
- 1.5 lb bone-in chicken thighs
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 3 carrots, cut into chunks
- 2 turnips, cut into chunks
- 2 zucchini, cut into chunks
- 1 15 oz can canned chickpeas, drained and rinsed
- 1 14 oz can canned diced tomatoes
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1 tsp ras el hanout (or a mild curry blend)
- 4 cups chicken broth
- 2 cups couscous
- 1.5 tsp salt
- 1/2 tsp black pepper
How to cook it
- Heat the olive oil in a large pot and brown the chicken thighs on both sides over medium-high heat, about 8 minutes total, then remove them to a plate.
- Add the onion and garlic to the pot and cook for 3 minutes, then stir in the cumin, coriander, turmeric and ras el hanout and cook for 1 minute more, until fragrant.
- Return the chicken to the pot with the carrots, turnips, chickpeas, tomatoes and 3 cups of the chicken broth, bring to a boil, then lower to a simmer, cover, and cook for 30 minutes.
- Add the zucchini and simmer, uncovered, for 15 to 20 minutes more, until the chicken is cooked through and all the vegetables are tender, then season with the salt and pepper.
- Meanwhile, bring the remaining 1 cup of broth to a boil, pour it over the couscous in a heatproof bowl, cover, and let it stand for 5 minutes, then fluff with a fork.
- Mound the couscous on a large platter, top with the chicken, vegetables and chickpeas, and ladle plenty of the spiced broth over the top before bringing it to the table.
