Spaghetti Bolognese (German-Style Beef Ragu with Spaghetti)
Spaghetti Bolognese (German-Style Beef Ragu with Spaghetti) is German home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 1.25 lb ground beef
- 2 tbsp olive oil
- 1 onion, finely chopped
- 1 carrot, grated
- 2 garlic cloves, minced
- 24 oz canned crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp sugar
- 1 tsp dried oregano
- 1 bay leaf
- 1.5 tsp salt
- 1/4 tsp black pepper
- 12 oz dried spaghetti
- 1/4 cup grated Parmesan, for serving
How to cook it
- Heat the olive oil in a large pot over medium heat and cook the onion and carrot until softened, about 6 minutes.
- Add the garlic and cook for 1 minute, then add the ground beef, breaking it up with a spoon, and cook until browned, about 8 minutes.
- Stir in the crushed tomatoes, tomato paste, sugar, oregano, bay leaf, salt, and pepper, and simmer uncovered for 20 to 25 minutes, stirring occasionally, until thickened into a mellow, kid-friendly sauce, a little sweeter and simpler than the Italian original the way German families cook it.
- Meanwhile, cook the spaghetti in salted boiling water until al dente, then drain.
- Remove the bay leaf and toss the pasta through the sauce, or ladle the sauce generously over each portion.
- Scatter the Parmesan over the top and serve hot.
