Creamy Shrimp Enchiladas

Ingredients
- 1.5 lb large shrimp, peeled
- 12 corn tortillas
- 2 cups shredded Monterey Jack
- 4 oz canned diced green chiles
- 1 cup sour cream
- 1/2 cup heavy cream
- 1 onion
- 3 garlic cloves
- 1 tsp ground cumin
- 2 tbsp butter
- 1/4 cup chopped cilantro
- 1 tsp salt
How to cook it
- Melt the butter in a skillet and cook the onion, garlic, and cumin until soft, about 5 minutes.
- Add the chopped shrimp and cook just until pink, about 3 minutes, then season with salt.
- Stir together the sour cream, heavy cream, and green chiles for the sauce.
- Warm the corn tortillas, fill each with shrimp and a little Monterey Jack, roll, and arrange in a baking dish.
- Pour the creamy sauce over the enchiladas and top with the remaining cheese.
- Bake at 375F until bubbling, about 20 minutes, then finish with cilantro.
