Ingredients

  • 2 cups whole wheat flour
  • 3/4 cup water
  • 1 tsp salt
  • 1 cup roasted gram flour (sattu)
  • 3 tbsp mustard oil
  • 1/2 cup onion, finely chopped
  • 2 green chilies, chopped
  • 1 tsp grated ginger
  • 2 cloves minced garlic
  • 1/2 tsp ajwain
  • 1 tbsp lemon juice
  • 2 tbsp chopped cilantro

How to cook it

  1. Make a soft dough with the whole wheat flour, a little salt, a spoon of mustard oil, and water; cover and rest for 20 minutes.
  2. In a bowl, mix the sattu with the onion, green chilies, ginger, garlic, ajwain, lemon juice, cilantro, and a spoon of mustard oil, adding a splash of water so the filling just holds together.
  3. Divide the dough into balls, flatten each into a small disc, and place a generous spoonful of the sattu filling in the center.
  4. Gather the edges up and over the filling to seal it into a stuffed ball, then flatten gently and roll out carefully into a thick round without letting the filling spill out.
  5. Cook on a hot tawa with a little mustard oil on both sides, pressing gently, until golden-brown spots appear on each side, about 4 minutes total.
  6. Serve hot with chokha or pickle on the side.
