Salade Composee (French Composed Salad)

Salade Composee (French Composed Salad) is French home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre and the fresh side. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.

Ingredients

  • 6 cups mixed lettuce
  • 2 tomatoes
  • 1 cucumber
  • 1 carrot, grated
  • 4 radishes, sliced
  • 1 cup comte cheese, cubed
  • 1 tsp dijon mustard
  • 1 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Whisk together the dijon mustard, red wine vinegar, salt, and pepper in a small bowl, then whisk in the olive oil to make a smooth vinaigrette.
  2. Arrange the mixed lettuce in a wide bowl or on individual plates.
  3. Top with the sliced tomatoes, cucumber, grated carrot, and radishes, arranging them in separate little piles the way a French composed salad is traditionally served.
  4. Scatter the cubed comte cheese over the top.
  5. Drizzle the vinaigrette over everything just before serving, or pass it at the table so each person dresses their own plate.
