Ingredients

  • 1 8-inch round crusty bread roll (or a small baguette)
  • 5 oz canned tuna in olive oil, drained
  • 1 hard-boiled egg, sliced
  • 1 tomato, thinly sliced
  • 1/4 red onion, thinly sliced
  • 8 Nicoise olives, pitted
  • 2 anchovy fillets
  • 4 fresh basil leaves
  • 2 tbsp olive oil
  • 1 tsp red wine vinegar
  • 1/4 tsp salt
  • 1 pinch black pepper

How to cook it

  1. Slice the bread roll in half and pull out a little of the soft crumb from each side to make room for the filling.
  2. Drizzle the cut sides generously with the olive oil and red wine vinegar so the bread soaks it up.
  3. Layer the tomato, onion, egg, tuna, olives, anchovy fillets and basil leaves over the bottom half, then season with the salt and pepper.
  4. Close the sandwich with the top half and press down firmly.
  5. Wrap the sandwich tightly and let it sit for at least 10 minutes if you have time, or eat it right away for a genuine quick Nicoise lunch.
