Rajma Masala

Ingredients
- 30 oz canned kidney beans
- 2 onions
- 1.5 cups tomato puree
- 5 garlic cloves
- 1 tbsp grated ginger
- 1 tsp cumin seeds
- 1.5 tsp ground coriander
- 1/2 tsp turmeric
- 1.5 tsp garam masala
- 1 tsp Kashmiri chili powder
- 3 tbsp neutral oil
- 1/4 cup chopped cilantro
- 4 cups cooked basmati rice
- 1 tsp salt
How to cook it
- Heat the oil in a pot over medium and let the cumin seeds sizzle for 30 seconds.
- Add the finely chopped onions and cook until deep golden, about 10 minutes, then stir in the garlic and ginger.
- Add the coriander, turmeric, and chili powder and cook for 1 minute, then pour in the tomato puree and cook until the oil separates, about 8 minutes.
- Add the drained kidney beans, a cup of water, and the salt and simmer 15 minutes, mashing a few beans to thicken.
- Stir in the garam masala and cook 2 minutes more.
- Finish with cilantro and serve over the basmati rice.
