Rajma Masala

Ingredients

  • 30 oz canned kidney beans
  • 2 onions
  • 1.5 cups tomato puree
  • 5 garlic cloves
  • 1 tbsp grated ginger
  • 1 tsp cumin seeds
  • 1.5 tsp ground coriander
  • 1/2 tsp turmeric
  • 1.5 tsp garam masala
  • 1 tsp Kashmiri chili powder
  • 3 tbsp neutral oil
  • 1/4 cup chopped cilantro
  • 4 cups cooked basmati rice
  • 1 tsp salt

How to cook it

  1. Heat the oil in a pot over medium and let the cumin seeds sizzle for 30 seconds.
  2. Add the finely chopped onions and cook until deep golden, about 10 minutes, then stir in the garlic and ginger.
  3. Add the coriander, turmeric, and chili powder and cook for 1 minute, then pour in the tomato puree and cook until the oil separates, about 8 minutes.
  4. Add the drained kidney beans, a cup of water, and the salt and simmer 15 minutes, mashing a few beans to thicken.
  5. Stir in the garam masala and cook 2 minutes more.
  6. Finish with cilantro and serve over the basmati rice.
