Punjabi Chole (Chickpea Masala)

Ingredients
- 1.5 cups chickpeas (chana)
- 5 cups water
- 2 onion
- 3 tomato
- 5 garlic cloves
- 1 tbsp grated ginger
- 2 green chilies
- 1 tsp cumin seeds
- 2 tsp chole masala
- 1 tsp ground coriander
- 1 tsp red chili powder
- 1/2 tsp turmeric
- 4 tbsp neutral oil
- 1/4 cup chopped cilantro
- 1 tsp salt
How to cook it
- Soak the chickpeas overnight, then pressure cook them with the salt and water until soft, about 5 whistles.
- Heat the oil in a pot and let the cumin seeds sizzle, then cook the onion, garlic, ginger, and green chilies until golden brown.
- Stir in the pureed tomato, chole masala, coriander, red chili powder, and turmeric and cook until thick and glossy.
- Add the cooked chickpeas with their liquid and mash a few to thicken the gravy.
- Simmer for 15 minutes, finish with cilantro, and serve.
