Pates au Beurre (Buttered Pasta)
Pates au Beurre (Buttered Pasta) is French home cooking, eaten at lunch and dinner. On the plate it is the dish at the centre. Below is what usually sits beside it, what it does and does not contain, and what else to cook once you have made it.
Ingredients
- 12 oz pasta (spaghetti or small shapes)
- 4 tbsp butter
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1/4 tsp black pepper
How to cook it
- Bring a large pot of salted water to a boil and cook the pasta until al dente, according to the package directions.
- Reserve a small cup of the starchy cooking water, then drain the pasta.
- Return the pasta to the warm pot and toss it with the butter until melted and glossy, adding a splash of the reserved water if it looks dry.
- Stir in the grated cheese and a little black pepper, and serve immediately while hot.
