Ingredients

  • 8 slices sliced white sandwich bread
  • 8 oz cooked ham, thinly sliced
  • 1.5 cups Gruyere cheese, grated
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 tbsp Dijon mustard
  • 1 pinch ground nutmeg
  • 1/4 tsp salt
  • 1/4 tsp black pepper

How to cook it

  1. Make a quick bechamel: melt the butter in a small saucepan, whisk in the flour, and cook for 1 minute, then gradually whisk in the milk and cook, stirring, until thickened, about 4 minutes; season with the nutmeg, salt, and pepper.
  2. Spread a thin layer of Dijon mustard on four of the bread slices, spread about half of the bechamel over them, layer on the ham and half of the grated Gruyere, and top with the remaining bread slices.
  3. Spread the rest of the bechamel over the tops of the sandwiches and scatter the remaining Gruyere on top.
  4. Place the sandwiches on a baking sheet and broil for 3 to 4 minutes, until the cheese is bubbling and golden.
  5. Let the sandwiches cool for a minute before cutting in half and serving hot.
