Palak Corn Sabzi

Ingredients
- 1 lb baby spinach
- 2 cups sweet corn kernels
- 1 onion
- 2 tomatoes
- 4 garlic cloves
- 1 tbsp grated ginger
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp ground coriander
- 1/2 tsp garam masala
- 3 tbsp neutral oil
- 3/4 tsp salt
How to cook it
- Blanch the spinach in boiling water for 1 minute, drain, and chop it roughly.
- Heat the oil in a pan and let the cumin seeds sizzle, then cook the onion, garlic, and ginger until soft, about 6 minutes.
- Stir in the turmeric, coriander, and chopped tomatoes and cook until the tomatoes soften, about 5 minutes.
- Add the corn and a splash of water and cook until the kernels are tender, about 6 minutes.
- Fold in the chopped spinach and salt and cook until the spinach is glossy and any water cooks off, about 5 minutes.
- Stir in the garam masala and serve hot with roti or rice.
